Not a complete expert here, but my 04 foreman run hot kinda fast as well,my oil cooler/radiator like was clogged up with mud, when i noticed i emediantly took it off and cleaned it out ASAP,be carefull the things will bend kinda easy, shortly after rode it for bout a hour without it ever burning my leg, just a hint of might be wut it is.

I fugured since he increased the piston volume, he prolly didnt adjust his carb. More CC's needs more fuel, or else **** be lean.

Check for a loose or torn intake boot.  With taking the top end off, you might have gotten a hole somewhere that air could be sneaking in from and leaning out the mixture.

Yep, hole in the intake boot would cause a lean condition too. Also.....Valves could cause the prob. Be sure you didnt get your exhaust valve to tight. Once the engine warms up it migh not be seating fully and letting some hot gases stick around to long.
