I have an 05 Grizz, it has K&N air filter, Jetted, and exhaust.  I took off the exhaust. Now it seems my my bike runs hotter than it used to.  My fan runs non stop.  Is there a way I can adjust my current jet, (i don't know size) or do I need to replace it with a new stock jet?

Why did you remove your exhaust? Because you removed your exhaust you are running lean. You will need to jet up to correct the problem.
