Can anyone tell me how to override the fan and put a switch on it? Maybe even some pics if anyone has them.

it's really simple

tap into the acc from the 12v accessory plug, run that to the supply of the switch (one side), run a wire from the switched (other side of switch) to the positive on the fan. Ground the switch if necessary (if it has an led), and your good to go! I run it on all the bikes

I believe so. I don't knkow the colors off hand. Just use a pocket tester or multi meter to test out which is positive. On the fan I know there is a black wire (ground) and another color...can't miss it.
