I let a buddy of mine drive my bike and he just went down the road about 3 miles and the bike run hot and shut down. The temp light never came on the only thing that came on was the FI light. He said he pulled it over as soon as it came on, but it shut down as soon as he pulled it over. He said that the bike started losing power before the light come on. I checked the airbox and it had 1" of oil in it. Well I have it at the dealership now getting rebuilt and they are claiming that they are getting the temp light to come on. I was just wondering why it did not come on when he was riding it

Yeah the overflow was dumping radiator fluid.

The light itself may be functioning fine but the sensor may be bad. I would check that and make sure it was functioning. Either way you are screwed. When you get it back be sure to run a manual switch to the fan. It is a life saver just be sure to turn it off in deep water. All of this is also solved by relocating the rad to the rack. Sucks your having to go through this.

If the coolant is low and the tip of the temp sensor isn't submerged in coolant it will not give you a reading. The fan will not come on and it will overheat , but, the light should have come on because the sending unit for the light is in the thermostat housing. It may be faulty.  How are they getting it to come on? If they are just jumping the wire then the sending unit still could be bad.
